My Gochujang Tofu Meatballs are a flavor bomb. This dish a heatlhy, hearty and so versatile filling with your veggies of choice.
Ingredients
- 1 Package Firm tofu
- 2 Tbsp Gochujang
- 1/2 Cup Gluten free breadcrumbs
- 1/4 Cup Soy sauce
- 2 Cloves Garlic minced
- 2 Inch Ginger minced
- 1 Cup Parsley chopped
- 2 Whole Green onions diced
Instructions

Begin by shredding the tofu. In a mixing bowl, add the rest of the ingredients and mix well. Using your hands, form palm size balls with the tofu and place on a baking tray.
Place in a 375 degree oven and bake for 35 – 40 minutes.
I added a gochujang tomato sauce to add top the meatballs in my dish. I served the meatballs over rice noodles with red bell peppers, baby corn, cabbage and shredded corn.
