Today, I’m thrilled to share with you a vegan recipe that’s not only bursting with flavor but also happens to be incredibly good for you. Sharing my Smoked Tofu Gluten-Free Sandwich – loaded with veggies and flavor and leave you feeling nourished and satisfied.

First things first, let’s talk about the star ingredient – smoked tofu. Not only does it provide a fantastic source of plant-based protein, but its smoky flavor adds a depth that elevates this sandwich to new heights. Plus, tofu is incredibly versatile and readily soaks up whatever flavors you pair it with, making it the perfect canvas for this sandwich. After marinating, I cooked the tofu in my airfryer. I am in love with this cooking methodology. I feel the airfryer creates the firmness in the tofu needed to hold up for a sandwich.

Flavor-Packed Ingredients
Let’s dive into what makes this sandwich so incredibly flavorful:
Smoked Tofu: As mentioned earlier, the star of the show! If you love smoky foods, this is a must try.
Eggplant: Roasted eggplant adds another layer of flavor and it is also rich in nutrients and high in antioxidants.
Asparagus: Cooked and immediately dropped into an ice bath.
Fresh Veggies: I love loading up my sandwich with crisp lettuce and juicy tomatoes.
Zesty Sauce: A tangy, zesty sauce ties everything together. In this combination, I used vegan mayo and sriracha for a burst of flavor.
How to Make It
Start by slicing your gluten-free bread – you can toast if you prefer but my bread held together well. Next, slather the bottom piece of bread with the vegan mayo combo. Layer on the smoked tofu, eggplant, asparagus and fresh veggies. Top it off with another drizzle of the vegan mayo topped by the other slice of bread. Slice it on the diagonal for presentation and enjoy!
Conclusion
Not only is this Smoked Tofu Gluten-Free Sandwich really good, but it’s also incredibly nutritious. Packed with protein, healthy fats, and an array of vitamins and minerals from the veggies, it’s a meal that will leave you feeling energized, satisfied and not heavy.

Smoked Tofu Gluten-Free Sandwich
My Smoked Tofu Gluten-Free Sandwich is loaded with great ingredients. The star of the show is the smoked tofu which adds so much flavor.
Ingredients
Smoked tofu
- 1 Package Tofu sliced
- 3 Tbsp Soy sauce
- 2 1/2 Tbsp Maple syrup
- 1 Tbsp Balsamic vinegar
- 2 Tsp Liquid smoke
- 2 Tsp Dijon mustard
Eggplant & Asparagus
- 1 Whole Small Eggplant sliced
- 2 Tsp Salt
- ! Bunch Asparagus trimmed
- 2 Tsp Olive oil
- 2 Tsp Kosher salt
Rest of Sandwich
- 6 Pieces Romaine lettuce sliced in half
- 1/4 Cup Vegan Mayo
- 3 Tbsp Sriracha
- 1 Whole Beefsteak tomato sliced
- 6 Slices Homemade gluten-free bread
Instructions
Smoked Tofu

Mix the sauce ingredients. Add the sliced tofu to the marinade. Let marinate for 15 – 30 minutes
Eggplant & Asparagus

Take the sliced eggplant and add the salt. Let the moisture come out for 10 minutes. Place on a baking tray and cook in a 350 degree oven for 15 minutes.
Take asparagus and place on a baking tray. Sprinkle with olive oil and kosher salt.
Place in the oven for 12 – 15 minutes. Immediately remove and place in a bowl of ice water to shock the asparagus and stop the cooking.

Assembling the Sandwich

Begin by adding the sriracha aioli to the bottom piece of bread. Next, add the lettuce and the tomato. Now add the eggplant, followed by the smoked tofu and the asparagus. Drizzle more of the aioli over the asparagus. Top with the second piece of bread. Serve and enjoy!
