Who doesn’t like mashed potatoes? When my parents come over, I have to keep it meat and potatoes and stick to the classics. This time, I tried to sneak in just a little bit of flair – smoked gouda. The base of this recipe is from The Pioneer Woman meaning I use cream cheese and seasoned salt. These ingredients make this dish a little healthier than the typical butter and sour cream. I do use butter by I cut it in half and I use skim milk instead of heavy cream. An ode to age but I do not believe you will taste the difference.
I served it with my Chicken Marsala. It was great to soak up the Marsala gravy. I would say the cheese competed with the Marsala. So if you try this, make sure it is paired with something a little more complimentary.
Recipe
Smoked Gouda Mashed Potatoes:
Ingredients:
- 5 lbs of red potatoes
- 8 oz of cream cheese softened
- 4 tbsp butter
- 1/2 – 1 cup of skim milk
- 1 – 1 1/2 tbsp seasoned salt
Directions:
Bring a pot of water to a boil and cook the potatoes (skin on) until fork tender. Put in to a mixing bowl with a paddle attachment and mix until broken up. Add the cream cheese and the butter and mix until combine. Start adding the milk to gain the smooth consistency. Add the seasoned salt, mix well. Enjoy!
