Healthy Gluten-Free Zucchini Lasagna
My Healthy Gluten-Free Zucchini Lasagna has so much flavor and is perfect for entertaining. It is a great healthy alternative.
Ingredients
- 1 Whole Large zucchini or 4 – 5 small zucchini slice lengthwise
- 1 Bottle or homemade tomato sauce
- 8 Ounces Ricotta
- 8 Ounces Mozzarella
- 6 Ounces Fresh Mozzarella
- 1/4 Cup Italian parsley rough chopped
- 1 Tbsp Italian seasoning
- 2 Tsp Oregano
- 1 Tsp Salt
- 2 Tsp Ground black pepper
- 8 Ounces Alfredo sauce
Instructions

Begin by heating the sliced zucchini in a 325 degree for 4 – 6 minutes to soften. Next, take a 9 x 13 glass baking dish and begin layering the lasagna. The order does not matter all that much but don't over use the cheese. Put a little of the tomato sauce, infused with the spices, on the bottom of the dish. Then, add the first layer of zucchini. Top with the ricotta. Repeat with the tomato sauce, zucchini and mozzarella. Now add the zucchini and the alfredo sauce. Keep going until the layers get to the top of the baking dish. The last layer is the zucchini, mozzarella and finish with the fresh mozzarella.
Bake for 35 – 40 minutes. Serve and enjoy!
