The inspiration for this Gluten Free Pasta in a White Wine Sauce came from watching some FOOD NETWORK show, maybe it was DINERS, DRIVE-IN and DIVES. What I saw them making was clams over pasta in a white wine lemon garlic sauce. I thought that looked simple and really tasty. It is amazing how simple some recipes can be good. Simple does not mean it does not have depth or complexity. Good recipes are about the combination of flavors. This easy recipe totally proves that concept.
The reality is the flavor, the sauce is a total of 6 basic ingredients. The sauce begins with the roasting of garlic in some olive oil. That step is always a good start. After the garlic begins to let off its aroma, add in the red onions. They are cooked until the red onions soften. With both of those flavors released, the white wine, lemon and oregano is added to the skillet. The liquid is cooked down a little to intensify the flavor. The dish is that simple. Remember to taste the sauce and check if it needs salt and pepper. It probably will need some.
Before sharing some basic learning experiences, I thought I would share a couple of the gluten free pasta dishes I have made before. The first is a GLUTEN FREE PASTA E PEPE which is a pasta with pepper. The second gluten free pasta dish was also vegan. It was a VEGAN GLUTEN FREE SPAGHETTI ALFREDO.
The two other learning experiences for this dish are there are some really good gluten free products out there. Pasta has come a long way. I have tried a number of gluten free pastas and I like the rice pasta, the chickpea pastas among some others. Knowing there are gluten free options makes my transition to gluten free eating easier. The other learning experience is the richness of butter. I have seen many a time where a chef finishes off their pasta dish with a little butter. Butter added at the end definitely makes for a rich, silky flavor. It does not need to be a lot, just a tablespoon or so.

Gluten Free Pasta in a White Wine Sauce
Ingredients
- 2 Tbsp Olive Oil divided
- 3 Cloves Garlic finely diced
- 1/4 Whole Red Onion slices
- 1 Cup White Wine
- 1/4 Cup Lemon Juice
- 1 Tbsp Oregano
- 12 Ounces Red & Yellow Grape Tomatoes
- 1/8 Whole Zucchini spiralized
- 1 LB Gluten Free Pasta
- 1 Tsp Salt
- 1 Tsp Black Pepper
Instructions

In a pot of water, cook the pasta to al dente. Drain and set aside.
Begin by heating the oil on medium heat. Add in the tomatoes and cook until they begin to blister. Remove from the pan and set aside.
Add in the garlic and cook for 1 - 2 minutes. Do not let it brown. Add in the red onion and cook for a couple of minutes. Next, add in the white wine, lemon juice and oregano. Reduce by about half. Taste and then add in the salt and pepper.
Add the noodles, spiralized zucchini and tomatoes. Mix well.
Serve and enjoy!
