Pasta dishes are the perfect vehicle for fusion. Pasta brings texture and serves as a vessel for any flavor you wish to bring. My Gluten Free Mexican Sausage Pasta is loaded with flavors and textures.
One thing I have learned cooking with gluten free pasta is you have to careful not to overcook it. When gluten free pasta is overcooked it tends to disintegrate. You definitely want to cook the pasta al dente and finish the cooking in the pan with the sauce. The other key in a dish like this is to make sure you sauté the turkey sausage first. Grill in its whole form, and then, finish the sautéing as slices so a good char is achieved. Then, you add the onions to pick up all the flavor left in the pan.
I mentioned above about pasta being such a good vessel for a fusion dish. I have made plenty of recipes hailing from different areas of the world. It is important in so many dishes that are layered that one adds flavor at each step. To make the dish, begin by sautéing the sausage. This step not only chars the sausage but leaves great flavor on the pan bottom. Next follows the addition of the onions. Sautéing the onions picks up all the flavor from the pan. The peppers are added next to soften. Now the tomato sauce is added and cooked for a couple of minutes to cook out the bitterness of the tomatoes. Add the sausages and then the noodles. Finish by adding in the cheese. Mix well.

Gluten Free Mexican Sausage Pasta
Use pasta as a vessel in fusion dishes. My gluten free Mexican sausage pasta has great flavor, texture and color – 3 keys to a great dish.
Ingredients
- 1 Lb Gluten free fusilli pasta
- 3 Whole Turkey Sausages
- 1/4 Whole Red Onion sliced
- 1/4 Whole Yellow Onion sliced
- 1/4 Whole Red Bell Pepper sliced
- 1/4 Whole Green Bell Pepper sliced
- 1/4 Whole Yellow Bell Pepper sliced
- 2 Cups Pasta Sauce
- 1/2 Cup Mozzarella
- 1 Tsp Salt
- 2 Tsp Pepper
- 2 Tsp Oregano
- 2 Tbsp Olive oil divided
Instructions

Begin by heat 1/2 tbsp of the oil in a skillet. Add the sausage and cook until nicely browned. Remove the sausages and slice them. Add them back to the pan and brown again. Set aside 3 of the sausages.
Meanwhile, prepare the pasta according to the box instructions.
Add the remaining oil to the skillet. Put the onions in and cook for 3 – 4 minutes. Next, add the peppers and spices and cook for 2 minutes. Now, add in the pasta sauce and mix well. Simmer for a couple of minutes. Return the 3 of sausages to the pan and simmer for a couple of minutes. Add in the noodles, mix well and cook for 2 minutes. Finish by adding in the cheese. Cook 2 more minutes and mix well.
Serve and enjoy!
