My Gluten-Free Macaroni salad: Light and creamy – perfect for any occasion is the perfect side dish for your BBQ or your late summer outing.
Ingredients
- 2 Lbs Gluten-free pasta
- 1 Whole Yellow onion diced
- 1 Whole Green, yello & red bell pepper diced
- 2 Stalks Celery diced
- 1 Whole Jalapeno diced
- 1 Tsp Salt
- 2 Tsp Black pepper
Dressing
- 1/2 – 1 Cup Homemade mayo (or store bought)
- 3 Tbsp Creole mustard
- 2 Tbsp Distilled white vinegar
- 1 Tsp Salt
- 1 Tsp Black pepper
- 1 Tsp Garlic powder
Instructions

Begin by cooking the gluten-free pasta according to the package instructions. Aim for al dente. When cooked immediately submerge into an ice bath, drain and set aside.
Combine all the dressing agreements and set aside. The dressing is even better if made ahead of time.
In a big bowl, add all the vegetables, the macaroni and the dressing. Mix well. Can be served right away or it can be placed in the fridge until the meal is ready to be served.
