My wife has really exposed me to edamame. When, the kids were younger, she always served them edamame has a healthy side and they liked it. I rarely indulged myself and I don’t know why. Fast forward a few years and my wife has me looking for and suggesting edamame recipes she finds. This Edamame Avocado Salad was part of a meal I/we made for my wife and daughter while she was still home.
The other ingredient that my wife loves, and me too, are avocados. We have avocados at almost every meal and I am not exaggerating. Avocados are good for you, add good flavor and great texture to dishes. Add in corn and peppers and you get good crunch and a good bite to the dish. All the dish needs to complete it is a squeeze of fresh lime. You can certainly use a lemon too. Super fresh, super easy, super good for you.
It is summertime and this Edamame avocado salad is perfect anytime. Pull it out for a picnic or to go over to friend’s houses. I am sure you will impress your friends with this recipe. If you have more time, grill the corn.
I am writing this post after our return from San Francisco. My wife and I just dropped off our youngest son for his summer internship. The great thing about dropping him off is our brother and sister-in-law live in San Francisco. So this was a trip more than it was helping our son get settled. We had great food, great wine but most of all, great company. We also got to spend some quality time with our nieces and a fly by with our nephew. We will take what we can get as they all proceed on their journeys to independence.
- 12 ounces shelled edamame
- 2 avocados diced
- 2 ears of corn
- 2 red fresno peppers
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- Cook the edamame according to bag instructions and cook the corn.
- Cut the corn from the ear. Place the corn and edamame in a bowl.
- Dice the avocados and place in the bowl.
- Dice the peppers and add to the bowl as well.
- Chop the cilantro and mix with the edamame, corn, peppers and avocados.
- Season with salt and pepper.
- Serve and enjoy!
All the vegetables and herbs chopped up and in a bowl.
The dressing is nothing more than a fresh squeezed lime.

I also do not indulge much in edamame but know that I should. I like it but do not often look for more ways to incorporate it into our meals. This salad, however, looks like a healthy, refreshing way to add more edamame into our dinner rotations!
