If I don’t mention this first thing, let alone in the post, I will never hear the end of it. This idea for the Cauliflower (Crust) Bread Grilled Cheese came from my daughter. She sent me a VIDEO that she saw on TASTEMADE. The minute I saw this video through, I knew we needed to try it. I waited to try it until she was home visiting. OMG – this is such a good sandwich. The sandwich has great texture and is so cheesy.
Obviously, I was fascinated by this idea because it is a great way to get a gluten free grilled sandwich. I love grilled sandwiches. They used to be my every Sunday lunch meal. What makes this sandwich so good is that each component is so good. I went to the Northwestern University football game today with my son – GO CATS!. We were talking about how good the deli sub sandwiches we picked up were. I commented the key to all good recipes is that each component is good. This was true with these deli sandwiches and it was certainly true with these Cauliflower Bread Grilled Cheese sandwiches. The cauliflower bread tastes amazing.
Cauliflower is so flexible. I have made so many recipes using cauliflower including RICED CAULIFLOWER and a MUSHROOM LEEK PASTA WITH CAULIFLOWER SAUCE. The cauliflower bread is so easy to make. The concept is no different than making bread. You mix the wet and dry ingredients together to get your dough. You definitely need to make sure you squeeze all the moisture, or as much as you can, out of the cauliflower. Once the mixture is prepared, you form it into a bread shape and grill it in a sauté pan. The sautéing is ultimately what holds the “bread’ together. You will also notice how cheesy this sandwich is. It definitely had a lot of cheesiness because I used two cheeses. YUM!

Cauliflower Bread Grilled Cheese
Ingredients
- 1 Head Cauliflower
- 2 Whole Eggs
- 2 Tsp Salt
- 2 Tsp Black Pepper
- 2 Tsp Oregano Leaves
- 1 Tbsp Olive Oil
- 8 Slices Chipotle Gouda
- 8 Slices Cheddar Cheese
Instructions

Cut the cauliflower into florets. Next, steam the cauliflower to al dente. Let cool a little and pulse the pieces in your food processor until your cauliflower looks like rice.
Put the riced cauliflower in a kitchen towel and squeeze out as much liquid as you can. Combine the eggs, salt, pepper and oregano and mix. Pour this mixture into the riced cauliflower. Mix well.
Heat the oil on medium high heat. Grab a palm full of the cauliflower mixture and place in the pan. Form into a bread like shape. Cook about 4 - 5 minutes per side - flip carefully. After cooking for about 4 minutes on the second side, add two slices of each cheese to one cauliflower bread. Cover the pan with a lid to help with the melt.
Once you have a good melt, you are done. Turn down the heat a little if you use cheese that takes a while to melt.

That reminds me of the cauliflower crust pizza. It was in fashion for a few years in the Italian pizzerias in Goa. I wonder how these taste like, they do sound great, especially because grilled cheese is involved!

This idea really plays off the pizza crust idea. There is flavor in the cauliflower, so it would be great on its own (I have done that too).

I’m so lucky that my kids absolutely love cauliflower! They eat it any way I give it to them, so I will have to try this! I’m sure my husband will want his with ham, but this is a great option for non meat eaters.
