Yes, you can steam and not boil your bagels! All you need is a steam oven.
Jump to RecipeMy last post was about using my steam oven to create Gluten Free Steam Bagels. The result was great. Well, I wanted to try gluten bagels as well, for my gluten wife, to see how these would turn out. The result – the Best Steam Bagels. It is truly awesome.
The only take away from the experience is for me to play with the baking time. I want to get a slightly crispier exterior. So it is either a longer bake time or baking the bagels twice. This gluten version is so good and so easy to make. Literally, the dough is mixed; then rises; then formed; steamed and baked.
The only real difference with my GLUTEN FREE STEAM BAGEL were the number of ingredients used. The gluten free recipe used a lot more ingredients. The bagels do not rise as much as there gluten counterparts. They do, however, have a really good consistency. They had a nice crust and a good chew. Just what you want in your bagel. Best Steam Bagels
Creating bagels could not be easier. These are the Best Steam Bagels made using my Thermador steam oven function.
Ingredients
- 4 Cups All purpose flour
- 1 Tbsp Sea salt
- 1 Packet Active dry yeast
- 3 Tbsp Agave
- 1 1/2 Cups Water luke warm
Instructions

Place all dry ingredients in the bowl of a stand mixer and pour over warm water a little at a time. Mix with a dough hook on medium/low speed for 5 minutes. Remove the dough from the mixer (it should be a little tacky) and knead on the countertop for 3-4 minutes. Place the dough into a bowl and cover with cling wrap and rise for an hour or so until doubled in size. Roll out the dough into a log like shape. Cut the dough into 8 equal portions and roll into balls. Roll the individual dough balls into a bagel shape. Next, take your wet fingers and make a hole. Round it out until smooth.
Place on the bagels on a baking tray covered with parchment paper. Turn your oven on to proof function. Add the bagles to the oven to prove and steam for 20 minutes. Remove from oven and let rest for 20 minutes. Add sesame seeds to any of the bagels you like. Heat the other oven to 375 degrees. Cook the bagels for 18 – 20 minutes. You are looking for a crispy exterior.
