When you start to make your own salad dressings, you will rarely go back to the bottle kinds. Do you need a salad dressing recipe that you can whip up in no time? Do you desire a creamy salad dressing but don’t want all the calories of a creamy dressing? This Avocado Cilantro Salad Dressing is the answer. And there is a half of cup of water in this recipe.
Every so often, there is a recipe that surprises you with how good it is. I know this is only a salad dressing but it has so much flavor. It is so summery, so fresh. My wife and I love avocados. We put avocados on almost every salad we make. We will eat avocados by themselves. Avocados are so creamy. The only experience you need with an avocado is to learn how to pick a ripe avocado. Do you know what I am talking about? You need to learn how soft the avocado should be when you squeeze it. You should be able to make an indent into the avocado when you squeeze it. If you cannot squeeze it, then it is not ripe. If you squeeze it and it is like mush, it is way over ripe.
This recipe for Avocado Cilantro Salad Dressing is ready in less than 5 minutes and has a grand total of seven ingredients. Seven sounds like a lot but one is water so we can say it has six ingredients. The two main ingredients are the avocado and the fat free Greek yogurt. I cannot believe how good this dressing is. It has water and fat free Greek yogurt. Are you kidding me. Do you get where I am coming from? How can this recipe be good with fat free yogurt and water? I guess it is all about the avocado. There is also a good amount of cilantro. The bottom line is the avocado and the cilantro generate plenty of flavor and the combination of the avocado and the yogurt create a creamy dressing.
- half an avocado
- ¼ cup Greek yogurt
- ½ cup water
- 1 cup cilantro leaves and stems
- 1 small clove of garlic
- ½ teaspoon salt
- a squeeze of lime juice
- Place all ingredients in a blender or food processor and blend until smooth. That's it!
- Serve and enjoy!
