The inspiration for this Indian Paneer Yellow Curry Pizza is using my leftover yellow curry and left over paneer. I have shared posts of my PAN FRIED CURRY PANEER and my SPINACH YELLOW CURRY LENTILS among others. I believe I am up to four recipes with some combination of these ingredients and I am not done yet. The two recipes noted above are pretty traditional. The last post was an INDIAN PANEER CURRY BURGER which was a great example of food fusion. In the burger we see Indian flavors with American culture. The current recipe mixes Indian flavors with an Italian classic.
The learning with this pizza is taking a page out of my white pizza book. There are so many different ways to flavor a pizza and it does not have to be with tomatoes. The base of this pizza is the yellow curry sauce I created. Once the dough was rolled out, the sauce was brushed on. I did not brush the sauce out to the edge so there would be some color and flavor contrast with this pizza.
What else I loved about this pizza was all the vegetables. The vegetables added a great crunch and even better color. I used red, yellow and green peppers. I added fresh spinach. The paneer cheese is a very slow melting (I am not even sure it will fully melt) and some shredded mozzarella for creaminess. The pizza had wonderful color and texture. I also really like the look of the browning of the paneer.

Indian Paneer Yellow Curry Pizza
Ingredients
- 1 Whole Wheat Pizza Dough
- 1/4 Cup Yellow Curry Sauce
- 1/2 Cup Shredded Mozzarella Cheese divided
- 8 Slices Paneer Cheese
- 3 Slices Red Pepper cut in half
- 3 Slices Yellow Pepper
- 3 Slices Green Pepper
- 3 Ounces Fresh Spinach
Instructions

Begin by rolling out the dough. Brush on the yellow curry sauce but do not go to the edge.
Next, add half of the mozzarella. Add the peppers and paneer cheese evenly spread out over the pizza. Finish by topping with the spinach and the remaining mozzarella.
Bake in a 450 degree oven for approximately 15 minutes. You are looking for a browning on the crust and the paneer.
Serve and enjoy!

What a creative idea! What turns the pizza dough blue? It looks like blue corn in the photos but you call for a whole wheat crust!
