It is summer and it is time for grilling. Â We love to grill all types of things in the summer from steak to fish, vegetables to corn and fruit for dessert. Â Yum. Â Grilling is so versatile. Â But grilling alone does not create a finished recipe. Â The key to a successful dish are the accents to the grilled food. Â So whether that is a side or a topping, think through your recipe so that the final dish is totally balanced. Â For me, when grilling fish, I have really gotten into creating a fruit salsa. Â It is so fresh, so summer so tasty. Â This mango salsa is a perfect complement to fish, and especially, this salmon. Â This mango salsa needs a hearty fish.
Ingredients:
- 1 mango
- 1/4 cup red pepper, diced
- 1 green onion, chopped
- 2 tbsp plus cilantro, chopped
- 1 jalapeno, finely chopped
- 2 tbsp lime juice
- 1 tbsp lemon juice
Directions:
In a medium bowl combine all the ingredients and let sit for 30 minutes. Â Now that was easy. Â When ready, top on top of the fish.
Serve and enjoy!
