Ricotta Dessert
Ricotta, like marscapone can be used in both savory dishes and in desserts. I have had a lot of good luck using marscapone in both dinners and desserts. I have made Marscapone Frosting, Smoked Salmon Alfredo Zoodles and Raspberry Parfaits. Each one of these recipes was quite good. For the desserts, the marscapone is really a sweet cheese.
I found the ricotta dessert not nearly as sweet as the marscapone. But why? So I did as I usually do, I looked it up. I found my answer on Quora.com. Marscapone is made from cream and ricotta is made from whey. Having this knowledge now, I would recommend marscapone if you like sweet desserts. If, however, you prefer desserts that are not so sweet, I would go with ricotta. For me, I now know that I want sweet desserts, and therefore, marscapone. I was inspired to make this dessert after seeing Giada make it. I was working out so I guess it is good that this dessert does not have a ton of calories.
If I make this dessert again, I would find ways to add sweetness. You could add more fruit; add honey; use vanilla yogurt or add jelly as examples. I think this dessert is very pretty and a great dessert to serve guests. Especially guests who eat fairly healthy. I still want my chocolate but in moderation. This dessert is super easy to make. Mix the ricotta and yogurt and you are done. Top with the fruit and the dessert is ready to serve.
- 1 cup ricotta cheese
- 1/2 cup plain yogurt
- 1/2 pint raspberries
- 1/2 pint of blueberries
- 1/2 pint blackberries
- In a small bowl, whisk the ricotta cheese and yogurt together until smooth.
- In each parfait glass, fill the glass up about three-quarters of the way.
- Top with as much fruit as you like.
- Serve and enjoy!

I definitely prefer Mascarpone over Ricotta for desserts, but I still like making desserts with Ricotta! This looks like a beautiful, simple but delicious dessert – would love to try it soon.
