What is your go to idea with leftovers? Mine is a grilled cheese. I love to make grilled cheese sandwiches for my Sunday lunches. I have posted a number of grilled cheese sandwiches including stuffed with tomatoes, turkey, Facon (Beef Bacon) and hatch chilies. As you can see, there is great versatility with grilled cheese sandwiches. The cheese and good bread make a great receptacle for each of the ingredients above and certainly for this Smoked Sausage Grilled Cheese. The smokiness of the sausage goes so well with the cheese.
The other great thing about these sandwiches is how quick you can make the sandwich. This sandwich comes together in 10 minutes. The smoked sausage had been cooked on the grill the night before with a nice char to it. So for this sandwich the sausage only needed to be reheated. Choosing a good bread was the final key to a really tasty sandwich. Rye bread was the perfect vessel for this grilled cheese.

I LOVE playing w/ grilled cheeses. Just two nights ago I said to my husband “I don’t feel like cooking, I’m making grilled cheese, what do you want me to jam in there”. I swear I’ll try anything if it’s pressed in between two toasty pieces of buttery bread with gobs of cheese. Smoked sausage is such a quick go to option, love it.
