This Banana Cake is such a great and simple recipe. It is so easy to put together. If you need a dessert for entertaining, and are short on time, pull out this recipe. Just because I am saying it is easy and quick, this does not mean it is not awesome. My family loves this dessert. The only prep item you need to have in the house is some ripe bananas. Actually, overripe bananas are even better. We always have bananas in our house and they are usually overripe. Bananas have lots of uses. We love to freeze overripe bananas and use in smoothies instead of ice. They add such good texture as well as flavor.
This banana cake was made knowing my mom and dad were coming over for dinner. Or I should say specifically my dad. This is his favorite cake. My mom, on the other hand, loves the frosting – cream cheese frosting. We had extra frosting that we served on the side. I think cream cheese frosting is so good. Any one, not just my mom, like to eat this frosting by itself. My wife put the extra in the fridge, and when my kids came home, she pulled it out for the cake. The cake was simply a vehicle to eat the cream cheese frosting.
The cake assembly includes creaming the butter and sugar, the mashed bananas and the dry ingredients.

Banana Cake
Banana cake with cream cheese frosting.
Ingredients
- 2 sticks Sweet Butter
- 1 cup Granulated sugar
- 2 whole Eggs beaten
- 2 whole Ripe Bananas mashed
- 1 3/4 cups All-purpose flour
- 1/2 tsp Salt
- 2/3 tsp Baking soda
- 5 tbsp Buttermilk
- 1 tsp Vanilla extract
Frosting
- 8 ounces Cream Cheese room temperature
- 6 tbsp Sweet butter room temperature
- 3 cups Confectioners sugar
- 1 tsp Vanilla extract
- 1/2 whole Lemon squeezed
Instructions

CAKE
Preheat oven to 350°. Spray two 9-inch layer cake pans with cooking spray.
Cream butter and sugar together until light and fluffy in a stand mixer.
Add eggs, one at a time, beating well after each addition.
Add mashed bananas, mixing thoroughly.
Sift dry ingredients and add to butter and egg mixture. Mix until flour has been incorporated completely.
Add buttermilk and vanilla. Mix thoroughly.
Pour batter into the prepared pans. Set on the middle rack of the oven and bake 25 to 30 minutes. Test with a toothpick by inserting in the cake and making sure it comes out clean.
Cool in pans on a rack for 10 minutes. Take out of pans and set aside.
CREAM CHEESE FROSTING
Cream together cream cheese and butter in a mixing bowl.
Slowly sift in confectioners’ sugar and continue beating until fully incorporated. Mixture should be free of lumps.
Stir in vanilla, and lemon juice if you use it.
Assembling:
When cooled, place one layer on a serving plate and frost with Cream Cheese Frosting.
Cover with second layer and frost top and sides of cake.
Serve and enjoy!

Could this be baked in a 9 by 13…if so,how long (glass pan)?

Cindy, yes to both. Glass can cook a little quicker so just check it a couple of minutes earlier. If you increase the surface by using a larger pan, you will need less time as well. Hope this helps.
