These Sweet Potato Fries were created to compliment a burger I made for Omaha Steaks. That post will appear later on the blog. What is funny about this post is how much I like sweet potatoes and sweet potato fries. I know as a kid, I definitely did not eat or like sweet potatoes. It is amazing how much our tastes change.

Sweet Potato Fries
Maybe it is growing up or maybe it is my palate expanding as I continue on this blogging journey. I have tried so many foods I never ate before and a number that I despised. Brussel Sprouts. Are you kidding me?! I remember the smell of brussel sprouts when my mom made them for my father. You remember the food that your parents put on your plate and said you couldn’t leave the table until you finished everything. Brussel sprouts were one of those foods that you moved around with your fork and tried to see if you could make it disappear under some other food. And then when you could not, you had to eat it. But you didn’t swallow. You kept it in your cheek until you were excused from the table. Remember? You know you do.
Sweet Potatoes are not on the same level as brussel sprouts but I never ate them. If you try them fried as I did here, you will never, ever go back.

- 4 sweet potatoes, peeled
- 1 quart corn oil
- Sea salt
- Take the peeled sweet potatoes and cut in half. Take the halves and the cut in half again. Next, cut in half horizontally. Now you are ready to make the final cut lengthwise that resembles french fries.
- Heat the oil in a cast iron skillet to between 350 - 375 degrees.
- Take the sliced fries and drop in the oil in batches. Cook for 3 minutes and remove to and set on a paper towel.
- After all the fries are fried once, fry again for another 3 minutes or so. The fries should not be nice and crisp.
- Remove to a bowl. Sprinkle the sea salt and toss in the bowl.
- Serve and enjoy!
