I got the idea for this salad from a recent experienced with Relished Foods which is a prepared proportion food company. Â I had a meal that the steak was topped with peppers marinated in oil & vinegar. Â This tri-color pepper salad (there are actually 4 colored peppers) is so tasty and so colorful. Â Peppers have become a favorite of mine. Â I love to use them in so many dishes whether it be my Cajun recipes or my Mexican recipes or my Southwestern recipes. Â I had never before, though, used them as the base of a salad. Â When they are marinated, you get great flavor while holding onto such a good crunch.
Ingredients:
- 1 green, red & orange pepper diced
- 2 yellow peppers diced
- 1/2 a red onion diced
- 4 garlic cloves, minced
- 1/4 cup parsley, chopped
- 2 – 3 tbsp Pico De Gallo spice
- 2 tbsp Distilled White vinegar
- 2 – 3 tbsp olive oil
Directions:
Dice all the vegetables into a reasonably small dice.
Chop the garlic and parsley and combine all the vegetables in a bowl.
Add the spice and the oil and vinegar and mix well.
Serve and enjoy!
