So after Thanksgiving, you generally have a few leftovers to choose from. I love grilling sandwiches as you know – my regular Sunday activity. This sandwich combines the turkey and the cranberry. Instead of overdoing it with the stuffing, I added some mild provolone as my melting cheese. Note to self, Grilled Turkey Cheese & Cranberry Sauce Sandwich for next year.
Ingredients:
- 2 slices of Italian white bread
- 3 slices of turkey
- 2 pieces of provolone
- 2 – 3 tbsp cranberry sauce
- 1 tbsp each canola oil and butter
Directions:
Add the oil and butter to a skillet on medium heat. Add the bread and cook on both sides until brown.
I added a little more butter when I flipped the bread. By cooking both sides this type of bread stays firmer. Remove the bread from the skillet and play on a baking tray. Top with the cheese and place in an oven pre-heated at 325 degrees. Cook for 1 – 2 minutes until the cheese melts.
Remove from the oven and top with the turkey and then the cranberry.
Combine the two sides of the bread and dig in. I actually ate mine by putting more cranberry sauce on the plate and dipping my sandwich in the sauce.

Oh man, this type of sandwich is one of my absolute favorites. I like your idea of toasting the inside of your bread first. At our house we will even put a little leftover stuffing in ours & do them in the panini press. I like to add a bit of dijon mustard to mine. We look forward to the leftover turkey sandwiches almost as much as we look forward to the turkey dinner itself! : )
