I write this post as I sit in my Las Vegas hotel room. Â Been a full and rewarding day at the ICSC conference (retail real estate). Â Modern technology is so cool when it works. Â I took the pictures over the weekend and write the post while I take a quick rest before dinner at Nobu. Â I hear it is amazing. Â Have any of you eaten at Nobu? Â What did you think.
As you have read previously, I through together a meal last Friday night with a Greek theme for the kids. Â The main course was Greek marinated chicken and lamb. Â I used a traditional marinate that would work well for each type of meat. Â If I had more prep time, the meat would be marinated for hours or even overnight.
Ingredients:
- 3 boneless, skinless chicken breasts
- 1/2 cup of olive oil
- 4 – fresh sprigs of rosemary and thyme
- 1 tbsp oregano (I could not find fresh in the store)
- zest and juice of 2 limes
Directions:
Combine the ingredients in a bowl or bag and drop in the chicken. Â Massage the marinate into the chicken and let soak for as long as you have, and in my case, about an hour.
Turn on your outdoor grill to medium. Â Place the chicken on the grill and cook on each side for 5 – 7 minutes. Â Move to the upper shelf and finishing cooking for another 10 minutes. Â Let the chicken rest before serving. Â Enjoy!
