I had a concept of something I wanted to create after seeing Giada (while riding an exercise bike) create a polenta pizza pie.  So I went to the cupboard to get my polenta started, and surprise, I must have used up all my polenta. Plan B!  I had a big bag of baking potatoes.  This should work.  This falls into the fun, comfort food category and definitely a repeat.
Recipe
Cheeseburger Mash Potato Pie:
- Boil water for the potatoes and prepare as you would your favorite mash potato recipe. I used skim milk with 2 tbsp of butter and 2 spoonfuls of soft cream cheese to make creamy
- In a separate stockpot over medium heat, add 1/2 diced large yellow onion, 3/4 of a diced green pepper and 1 jalapeno pepper diced and cook until softened approximately 5 minutes
- Add 1 tbsp each smoked paprika and ancho chili powder, 1/2 tbsp each garlic powder and oregano and finish with 1 tsp each of salt, pepper and basil
- Then add 3 lbs of ground beef to stockpot and cook until browned
- Add 1 more tbsp of smoked paprika and hot paprika to mixture
- Allow to cool and drain excess liquid
- In a springform pan lined with wax paper, layer in the mash potatoes on the bottom layer: cover with a generous layer of cheddar cheese; then add a layer of the meat mixture; repeat each layer one more time using smoked gouda and pepperjack for the cheese layer
- Warm an oven to 325 degrees and cook for 15 minutes
- Final step is to add one last layer of cheese, I used a cheddar and smoked gouda mix and cook for 10 more minutes and serve
LOL, a far cry from the Turkey Bolagnese I came here to find but…. YUM!

This really does put a new spin on meat and potatoes! Love the use of smoked gouda in here. I like how the layers are made in this, making it a pretty even distribution so all elements can be in one bite. This recipe is a keeper, glad you invited me on over. Have a great weekend.
